Ingredients:
400g of spaghetti
2 tablespoons of olive oil
1 onion, finely chopped
2 garlic cloves, minced
1 can (400g) of chopped tomatoes
1 teaspoon of dried oregano or basil (or a mix of both)
Salt and pepper, to taste
Fresh basil leaves, for garnish (optional)
Grated Parmesan cheese, for serving (optional)
Instructions:
- Cook the Spaghetti: Fill a large pot with water, add a pinch of salt, and bring it to a boil. Add the spaghetti and cook according to the package instructions until al dente. Then drain it, reserving a cup of the pasta water.
- Make the Sauce: While the spaghetti is cooking, heat the olive oil in a saucepan over medium heat. Add the chopped onion and sauté until it becomes soft and translucent. Add the minced garlic and cook for another minute, being careful not to let it burn.
- Combine Ingredients: Pour in the chopped tomatoes, add the dried herbs, and season with salt and pepper. Let the sauce simmer for about 10-15 minutes, stirring occasionally. If the sauce gets too thick, add a bit of the reserved pasta water to thin it out.
- Combine Spaghetti with Sauce: Add the drained spaghetti to the sauce and toss to coat the pasta evenly. If needed, add a little more of the reserved pasta water to get the consistency you like.
- Serve: Plate up the spaghetti, garnish with fresh basil leaves if you have them, and offer grated Parmesan cheese on the side.
This easy recipe for spaghetti serves about four people and is wonderfully versatile. You can add vegetables, like spinach or mushrooms, to the sauce, or throw in some cooked chicken or prawns for extra protein. Yum!
