Nourish: Pesto, Sweet Potato + Egg Salad Recipe

Mama muse and celeb chef, Zoe-Bingley Pullin, believes sticking to a healthy diet and exercise regime is what helps keep her mental health in check. And now she’s helping other busy mums feel the benefit of a wellness boost with the launch of the 4 Week Body Reset Program with Dietlicious. Here is one of her fav recipes from the program.

Pesto, Sweet Potato + Egg Salad

Serves: 2
Pre: 15 minutes
Cook: 10-15 minutes

Ingredients

250g sweet potato, peeled, cut into chunks
2 cups kale leaves, roughly torn
½ punnet cherry tomatoes, washed and cut in half
1/4 bunch parsley, washed and finely chopped
2 free range eggs
extra virgin olive oil

Pesto
1 bunch basil leaves, washed
2 garlic cloves, crushed
½ cup parmesan cheese
100g macadamia nuts, toasted
juice of 1 lemon
¼ cup extra virgin olive oil
½ tsp. spirulina powder, optional

Method

1 // To make the pesto, blend all ingredients in a food processor until smooth, set aside.

2 // In a large saucepan or steamer, add the sweet potato and boil/steam for 10 minutes or until tender. Drain and leave to cool.

3 // In a small saucepan, add water and the eggs. Bring to the boil and cook for 3 minutes. Remove eggs and leave to cool. Once cooled cut eggs into quarters.

4 // In a large bowl, add the kale leaves and a drizzle of olive oil, massage the kale leaves until tender. Add the potato, parsley, tomato and 2 tbsp. pesto dressing, gently combine. Spoon the salad onto a serving dish and top with the eggs.
