Want a fuss-free recipe for Valentine’s Day? You got it, girlfriend. Strawberry cheesecake parfaits are super easy, no-bake, and totally delicious.

No matter how you’re celebrating February 14th – date night with your bae, hangs with your bestie, or maybe some overdue me-time – this needs to be on the menu. It’s a simple, sweet treat that looks fancy AF but is absolutely fuss-free. It really is the perfect dessert recipe for Valentine’s Day. Enjoy, my sweets.
Ingredients
For the crumb layer
1 cup of crushed digestives biscuits (sounds unsexy, but they’re super delicious)
2 tablespoons of melted butter
For the strawberry layer
1 cup of fresh strawberries, hulled and diced
1 tablespoon of sugar
For the cheesecake layer
1 cup of cream cheese, softened
1/2 cup of icing sugar
1 teaspoon of vanilla extract
1 cup of whipped cream
Method
1. Prepare the Crumb Layer
Mix the crushed biscuits with melted butter. This will be the base of your parfaits.
Spoon a layer of the mixture into the bottom of your serving glasses or jars.
2. Make the Strawberry Layer
In a bowl, mix the diced strawberries with a tablespoon of sugar. Let them sit for about 10 minutes until they release some juices.
Spoon a layer of the strawberries over the crumb layer in your glasses.
3. Whip Up the Cheesecake Layer
In a mixing bowl, beat together the cream cheese, icing sugar, and vanilla extract until smooth and creamy.
Gently fold in the whipped cream until well combined.
Pipe or spoon the cheesecake mixture over the strawberry layer in your glasses.
4. Chill and Serve
Pop the parfaits into the fridge for at least an hour to set.
When you’re ready to serve, you can garnish with some extra strawberries or a sprinkle of graham cracker crumbs on top for that extra touch.
