Beet is not always a first choice when it comes to veggies. High in folate, vitamin C and fibre, it is, however, a worthwhile addition to any family member’s diet.
Try this delicious strawberry and beet smoothie blend. Naturally sweet, it can tempt all taste-buds (even young ones) to give beets a try.
Prep time: 5 mins
Serves: 2
// Ingredients
- 1 banana, frozen
- 1 cup beetroot, finely grated
- 1 cup strawberries, frozen
- 2 Medjool dates
- 1 Tbsp chia seeds
- 1 Tbsp coconut butter
- 2 cups cashew milk (or dairy-free milk of your choice)
// Method
- Place all ingredients into a blender and blend until smooth and creamy.
Serving and storing leftovers: Serve immediately, store in the fridge for up to 24 hours or freeze for up to 4 months.
