It’s love. These Pistachio Matcha Balls took a little time to roll. But they’re totally worth it 👅

The reason I started Whole Vegan Pantry (while it’s evolved a little) was animal welfare. It’s not something I talk about a lot on my Instagram page. I want to make it light and not scare off the non-vegans (😂). But I struggled for years to transition from vegetarian to vegan. When I finally mastered it, I never looked back – and also never felt better. What I wanted to do in starting this journey was share some yummy and healthy vegan food, and hopefully in my own way make some sort of difference. Eat more plants 🌱#truth #iloveanimals🐮

// Ingredients
  • 1 cup shredded coconut
  • 1 cup raw cashews
  • 1/4 cup pistachio nuts
  • 1/4 cup oats
  • 4 tbs rice malt syrup
  • 2 tbs runny coconut oil
  • 2 tsp pure matcha powder
  • 1 tbs pure maple syrup
  • 1 tsp vanilla extract
// Method
  1. Blend all ingredients until smooth.
  2. Roll into balls.

Storage tip: Keep in the fridge.
